Recipe for 4 persons

Ingredients

anchovies 1/2 Kg

lemon juice

white vinegar

white wine

salt

sugar

Oregano

extra-vergin oil

Instructions

Clean the anchovies removing head and internal organs rinsing them properly then lean them on the paper towel. In a flat wide oven–dish pour a glass of lemon juice, a glass of white vinegar, salt, a pinch of sugar and less than half glass of dry white wine and the anchovies at the end.

Thereafter put the oven-dish in the fridge, covered by a cling film for 2 hours.

Afterwards, remove it from the fridge and put the anchovies on the paper towel in order to dry them. Wash and dry the oven-dish and pour some extra-virgin olive oil inside, then the anchovies with oregano doing many layers. Put it in the fridge for an hour and the dish is ready.
