Ingredients (for 4 persons):

    Anchovies 600g
    2 eggs
    bread crumbs
    chilled sparkling water
    seeds oil


Properly clean the anchovies, if big you should fillet them, if small just remove head and internal organs.

Pour some seeds oil into a pan, dry the anchovies and cover them with flour, then with the whisked eggs and at last with the bread crumbs. Press them properly so that the breading becomes adherent.

Fry the anchovies in the hot oil, and then dry them with the paper towel.
